4 Wholesome Meals For One To Make Under 20 Mins

If you’re someone who’s trying to make it on your own, chances are that you often end up cooking instant noodles for breakfast, lunch, and dinner; day in and day out. We’re here to rescue you with these super simple recipes that you can make under 20 mins—preparation time included!

Mushroom & Herb Omelette

Prep Time: 5 mins

Cook Time: 7 mins

The Elements:
1 egg

½ cup mushrooms

A few sprigs of parsley, chopped

1 tablespoon garlic

1 ½ tablespoon butter

Salt, to taste

Pepper, to taste


Whip the egg, season with salt and pepper and set aside.

In a warm skillet, add a tablespoon of butter, the mushrooms, and the garlic. Cook until it has softened and is golden brown in colour.

Arrange the mushrooms in a dispersed manner in the skillet/ frying pan, and add a half tablespoon of butter.

Pour the whipped egg and garnish with parsley. Cook on one side for a minute or until it’s not as runny, and flip it over. Serve hot.


You can load this omelette with a lot of veggies, and sprinkle cheese on top just before you flip it over.

Tomato, Basil, & Mozzarella Sandwiches

Prep Time: 5 mins

Cook Time: 2 mins

The Elements:

2 slices brown sandwich bread

1 tablespoon olive oil

1 tomato

2 mozzarella slices

4 basil leaves

Salt, to taste

Pepper, to taste

Garlic powder, to taste


Take the slices of brown bread or any slightly harder, crusty bread (like ciabatta) and drizzle olive oil on one side.

Place the tomato slices, the cheese, and the basil leaves on one slice.

Sprinkle garlic powder, salt, and pepper on top and close the sandwich with the other slice of bread.

Drizzle oil on a hot skillet, and put the sandwich on it. Cook for about a minute on each side, or until the cheese begins to melt.  Serve hot.


You can also add your choice of cold cuts like chicken salami or prosciutto to the sandwich. Additionally, you can skip the bread altogether, use cherry tomatoes instead of the regular ones, and toss all the ingredients in a bowl and turn it into a super delicious salad.

Easy Lemon Chicken

Prep Time: 8 mins

Cook Time: 12 mins

The Elements:

1 tablespoon olive oil

1 tablespoon garlic, finely chopped

1 cup zucchini, quartered and sliced

1 cup onion, quartered and sliced

2 boneless chicken breasts, thinly sliced

1 tablespoon lemon juice

1 tablespoon white wine (you can use chicken stock instead as well)

Salt & pepper, to taste


Drizzle olive oil in a large skillet over medium heat.

Put the zucchini, garlic and onion in the skillet, and let cook for about 3-5 mins or until the vegetables start to soften.

Move vegetables to one side of the skillet and add the chicken breasts. Cook on each side for about 2-3 mins or until cooked through.

Sprinkle salt and pepper over the chicken and vegetables, Add the chicken stock/ white wine, and combine. Cook for another minute or so.


You can have this easy-peasy recipe with rice, garlic bread, or noodles.

Pan-fried Cinnamon Banana

Prep Time: 5 mins

Cook Time: 5 mins

The Elements:

2 ripe bananas

2 tbsp sugar

1 tsp cinnamon

¼ tsp nutmeg

1 tbsp butter, for greasing


Peel bananas and thinly slice them.

In a small bowl, combine sugar, cinnamon, and nutmeg. Set aside.

Lightly grease a frying pan or skillet, and keep on medium flame. Put the banana slices in the pan and cook for 2-3 mins without turning over.

Sprinkle the cinnamon, nutmeg, and sugar mixture and flip the slices. Sprinkle the sugar mixture on this side too, and cook for 2 mins.


If you have access to ice-cream at home, or it still isn’t too late at night, you can enjoy this with a scoop of vanilla ice cream and drizzle it with honey. Additionally, you can use honey or brown sugar, instead of white sugar in the recipe.
