Lettuce Cups With Quinoa, Pineapple & Zucchini For Healthy Appetisers
A healthy, delicious and filling appetiser for when you’re having friends over during the festive season.

Cook Time: 20 mins
1 ½ cups water
1 teaspoon salt
¼ cup quinoa
½ tablespoon oil
½ tablespoon butter
2 cloves garlic, chopped
½ yellow zucchini, sliced
1 cup diced pineapples
¼ teaspoon cinnamon powder
5-6 baby lettuce leaves
Balsamic vinegar, to taste
Add the water and salt to a pot and cook the quinoa for about 10 to 12 minutes. Set aside.
Heat oil in a saucepan and add the butter, garlic, and the zucchini slices. Cook for about five minutes, until lightly browned.
Remove the zucchini from the pan, and set aside.
In the same pan, sauté the pineapples with cinnamon powder for two minutes.
Lay the lettuce on a plate, and add a spoon of the cooked quinoa on each leaf.
Place a slice of zucchini on each and top them with the pineapples. Add a drop or two of some balsamic vinegar and serve!
